We influence our spouses more than we realise. It’s been almost 3 weeks since hubs knew of my 2018 resolution and we started having more homecooked meals. Not only is he more open to veggies, he’d rather save stomach space for my cooking than consume outside food, especially when I make rice.
I panfried some shrimp in melted butter, cajun spices, dried shrimp and chilli flakes. Turn off heat once the shrimp turns pink but leave the skillet on the stove until they redden. Scoop them out, set aside and reserve the juices.
Add a fresh cube of butter and fry cabbage at high heat for about a minute. Reduce heat to medium, cover and cook until the cabbage softens. Add cut Asian eggplant or brinjal chunks, stir till mixed and sprinkle more chilli flakes, 2 capfuls of Chinese rice wine and ¼ of a mini carton of chicken stock. Cover and cook at medium heat until the eggplant softens and the cabbage is wilted. Set aside.
Melt another cube of butter and crack eggs into the skillet. At medium heat, gently stir and add a dash of milk. When they’re 70% cooked, turn off the heat. Leave the skillet on the stove and stir to desired consistency. Scoop over the shrimp and serve with a dash of chilli flakes and butter rolls spread with chilled cottage cheese.
Hubs ate his portion of veggies, took half of mine, then a little bit more. I feel good that he’s eating better now.
