Lemon curd tart
This pie is made with 1-2-3 dough, also called cookie dough. And it taste a little too sour for me. The swiss meringue on top, I over-did it with fire torch. It is a little bit too dark. But on appearance, I would buy it or have it on a buffet for sure.
Key Lime Pie
This pie is made with Graham crust. Which make the bite more crispy. And I really like the design I did. Topped with swiss meringue and brown it with fire torch. The taste is sour and sweet, a little nasty. But overall, it is a good pie. And on the fire torch part, I over did it. Some part is a little too dark. So, should be careful with that next time.
Linzer Pie
This pie is hard to make. Because it is made with Linzer dough, A short dough, it breaks really easily. But after it baked, turn out really nice, a brown color, really nice. And the filling are almond cream and raspberry. This pie is usually made on Valentines Day. It taste sweet, crunchy and an almond flavor. Really nice. I really like it.
Chocolate Pecan Pie
The best pie ever!!! The pie is made with pate a foncer dough. The way the dough was made is sticky because of the egg we put in. But the result is amazing, as you can see, it is very flaky, just like a puff pastry dough. The filling is the point, the match between pecan and chocolate, I just can’t.. If you ever try this, please do so. A sweet, chocolate flavor, smooth and turn out to be a complicated flavor.
Butternut Squash Pie
This pie is made with basic pie dough, inside with squash filling, topped with whole wheat pie dough leaves. I really like this pie because of the design. Although I’m not a fan of squash or pumpkin but in this pie it really taste not bad. A smooth mouth feel and it really matches with the pie shell. Really nice, I love it.
Lemon Chiffon Pie
This pie became one of my favorite pie as I taste it. It is made with basic pie dough. And the filling is just amazing. A little bit sour and the strong lemon flavor. Topped with Chantilly cream, coco nibs, and candied lemon zests. The thing is that the Chantilly cream on top, I didn’t calculate about how the pie will be cut. Should be even number. But I piped 9. And it was not a nice circle. So, should work on that.
Chocolate Cream Pie
This pie is made with basic pie dough. What is new to me is that I made pastry cream and infuse it with dark chocolate. And use peanut cream as a barrier between the shell and the filling. Topping with Chantilly cream, peanut cookie crumbs and Oreo cookie crumbs. The taste is just amazing, smooth chocolate flavor and a little peanut flavor. These two turn out to be a perfect flavor. The thing is that I didn’t put roasted peanut on top. Because some people are allergy to peanut. Have to put peanuts on top so that people know that there is peanut on or in the pie.
Apple Pie
This pie I finally learn how to make the topping like the photo shown. And it is surprisingly easy, maybe is because I only do like 8-9 strips. After baking it, it looks really nice. The egg wash on top made a nice color. The filling I use is also like the blueberry pie. The cook juice method. Make the taste a lot more smoother and watery. Compare to the previous apple pie, the apple inside the pie is more soft and I think it has more flavor than last one. As the picture shown, the pie shell is going over the plate. I did it again. Didn’t tuck it in hard enough. Have to make sure it won’t happen again.
