The sea scallops in this elegant dish are cooked just right and served with a rich white wine garlic cream sauce. It's surprisingly easy to make at home and tastes like it came from a restaurant.
Ingredients: 8 large sea scallops, patted dry. 2 tablespoons olive oil. Salt and pepper to taste. 2 tablespoons butter. 3 cloves garlic, minced. 1/2 cup dry white wine. 1 cup heavy cream. 2 tablespoons chopped fresh parsley. Lemon wedges, for serving.
Instructions: On both sides, season the scallops with salt and pepper. Put olive oil in a big skillet and heat it over medium-high heat. Sear the scallops in the pan for about two to three minutes on each side, until they are golden brown. Take it out of the pan and set it aside. Put butter and minced garlic in the same pan and melt them together. This will take about one minute of cooking. Add the white wine and let it cook down until it's half gone. Scrape the bottom of the pan to get rid of any browned bits. Pour in the heavy cream and cook the sauce for about two to three minutes, until it gets a little thicker. Put the scallops back in the pan and cover them with the sauce. Add one more minute to heat everything up. Add chopped parsley on top, and serve hot with lemon wedges.
