Ingredients: 1 cup creamy peanut butter. 1 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. 1/2 teaspoon baking soda. Pinch of salt. Optional: 1/2 cup chocolate chips or chopped nuts for topping.
Instructions: Preheat your oven to 350F 175C. Line a baking sheet with parchment paper. In a mixing bowl, combine peanut butter, sugar, egg, vanilla extract, baking soda, and salt. Mix until well combined. Roll the dough into small balls, about 1 tablespoon each, and place them on the prepared baking sheet. Use a fork to flatten each cookie and create a criss-cross pattern. If desired, gently press chocolate chips or chopped nuts onto the tops of the cookies. Bake in the preheated oven for 8-10 minutes, or until the edges are slightly golden.
