Delicate and rich, these Spiced Rum Meltaways are buttery cookies with a warm blend of spices and a hint of spiced rum. They're perfect for festive occasions or whenever you crave a delightful treat.
Ingredients: 1 cup butter, softened. 1/2 cup powdered sugar. 2 cups all-purpose flour. 1/4 teaspoon salt. 1 teaspoon vanilla extract. 1 tablespoon spiced rum. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground cloves. 1/2 cup chopped pecans or walnuts. Powdered sugar, for coating.
Instructions: Mix the softened butter and powdered sugar in a large bowl until the mixture is light and fluffy. Spiced rum, ground cinnamon, ground nutmeg, and ground cloves should all be added. Combine well. Slowly add the all-purpose flour and salt to the wet ingredients, mixing them in until the dough forms. Add the chopped walnuts or pecans and mix them in. Take two equal pieces of dough and roll each one into a log that is about 1.5 inches across. Put the logs in the fridge for at least one to two hours, or until they are firm. Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Roll out the chilled dough and cut it into rounds that are about 1/4 inch thick. Place the rounds on the baking sheet that has been prepared. After the oven is hot, bake for 12 to 15 minutes, or until the edges are just beginning to turn golden. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down. Once the cookies are cool enough to touch, coat them with powdered sugar. Put the Spiced Rum Meltaways in a container that won't let air in.
