Tasty Fried Rice
I made this last night and it was so good! Comfort food but with lean protein and whole grains 😉Follow for more recipes!
INGREDIENTS:
2 cups whole grain basmati rice
2-3 boneless skinless chicken breasts
1 egg
3-4 Tbsp olive oil
6-8 cloves of garlic
2 green onions
1 tsp curry powder or garam masala plus a sprinkle
1 tsp ginger plus a sprinkle
1 tsp garlic powder
1 tsp onion powder
1 tsp red pepper flakes
Kosher salt to taste
1 Tbsp soy sauce
1 Tbsp rice vinegar
1 tsp sriracha or more to taste
DIRECTIONS:
Start by making your rice. I make mine in an instant pot, which takes 22 mins at high pressure. Once the rice is underway, chop up your garlic and green onions and put them aside in a small bowl.
Slice the chicken breasts into 1/2 inch slices.
Pour a few tablespoons of olive oil into a medium bowl and stir the chicken in, making sure to coat completely. Season with the salt, curry powder, ginger, onion powder, garlic powder, and red pepper flakes. Stir till combined.
Heat 2 tablespoons of olive oil to medium high in a large saucepan. Cook chicken for 5 to 7 mins. To check the doneness, cut a piece in half. When the chicken is done, put aside.
Add another splash of olive oil to the pan and sauté the garlic and green onions for a few minutes, until fragrant. Meanwhile, whisk the egg.
Make some space in the pan and cook the egg. When it is done, mix the contents of the pan and add a sprinkle of curry powder and ground ginger. Now it’s time to add the rice. By now it should be done, so pull it out and add it to the pan. Add the chicken as well and stir until it is combined. Add the soy sauce, rice vinegar, and sriracha, give it one last stir, and serve!
