Tender pork slices, vibrant mixed vegetables, and lo mein noodles are combined in this quick and simple stir-fry recipe and tossed in a flavorful sauce. Ideal for a filling supper on a weeknight.
Ingredients: 8 oz 225g lo mein noodles. 8 oz 225g thinly sliced pork. 2 cups mixed vegetables bell peppers, broccoli, carrots. 2 cloves garlic, minced. 2 tbsp vegetable oil. 2 tbsp soy sauce. 1 tbsp oyster sauce. 1 tsp sesame oil. 1/2 tsp ginger, grated. Salt and pepper to taste. Green onions and sesame seeds for garnish.
Instructions: Cook the lo mein noodles according to package instructions. Drain and set aside. Heat 1 tbsp of vegetable oil in a large skillet or wok over high heat. Add the thinly sliced pork and stir-fry until it's no longer pink. Remove the pork from the skillet and set it aside. In the same skillet, add another tbsp of vegetable oil if needed. Add minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant. Add the mixed vegetables and stir-fry for 2-3 minutes until they start to soften but remain crisp. Return the cooked pork to the skillet with the vegetables. Add the cooked lo mein noodles, soy sauce, oyster sauce, sesame oil, salt, and pepper. Toss everything together and stir-fry for an additional 2-3 minutes until the noodles are heated through and well-coated with the sauce.
