Fennel Apple Meatloaf
Hell-O turkey loaf! I love the apple in this because it give it a sweet and sour taste mixed with the earthy-ness of the fennel makes this a great dinner. The trick to not drying out turkey is low heat and baking longer with a decent rest time. Turkey needs to breath out of the oven and re-absorb the juices.
1 Diced medium Onion 2 Garlic Cloves 1 Fennel Bulb Chopped 1 Chopped Granny Smith Apple 1tb Ground Coriander salt and pepper 1 cup Sharp cheddar Cheese 2lb Ground Turkey 2 Slices Bread (anything around the house) 1 egg
Pre-Heat the Oven to 350 degrees
In a skillet soften the onion, garlic, fennel, and apple until the onion is translucent, about 10 minutes. Meanwhile, In a bowl mix together the remaining ingredients. When the vegetables are cooked add them to the meat mixture and mix them together with a spoon and add to a 9x13 baking dish. Bake for 40 minutes. Importantly, Let rest for 15 minutes before serving to regain the moisture.

Cajun Turkey Burger
Great easy lunch idea. I made these a head of time and cut up all the veggies and put everything into zip lock bags then took a burger to work for lunch. Trust me people were jealous. These are lean so pack side options.
1lb Ground Turkey 2tb Cajun spice 1tb Garlic powder 1tb Onion powder 1/2tb Paprika salt and pepper Sliced Tomato Sliced Onion Mayo 1 egg4 Slices cheddar cheese
In a Bowl combine the turkey, all the spices, and the egg. Mix together throughout and form 4 patties. Heat a grill pan on medium heat until the point of sizzle on contact with meat. Cook each side for about 10 minute each. When almost cooked add cheese to top. Meanwhile, slice veggies. Enjoy
ZESTY Ranch Mac & Cheese
ZESTY!!! Well who doesn't love ranch.... and mac and cheese. So COMBO! Love this. Great cream thick sauce with great flavor. And even better the next day.
1lb Macaroni 1 cup 2% Milk 1/4 cup butter 1 envelope Ranch mix 1 tsp Garlic Powder 1 cup shredded Monterey Jack Cheese 1 cup shredded Colby Cheese 1 cup sour cream1/2 cup Parmesan Cheese 1/2 cup Italian Bread crumbs
Cook macaroni according to package directions. While pasta is cooking in a separate pot combine milk, butter, and ranch over medium heat. When melted add cheese to melt then add sour cream and bread crumbs.
