These chicken and vegetable kabobs are a perfect addition to your summer grilling menu. They are marinated in a flavorful blend of olive oil, lemon juice, and spices, resulting in tender and juicy skewers with a delightful charred flavor. Enjoy them at your next barbecue or summer gathering!
Ingredients: 4 boneless, skinless chicken breasts, cut into 1-inch cubes. 1 red bell pepper, cut into chunks. 1 yellow bell pepper, cut into chunks. 1 red onion, cut into chunks. 1 zucchini, sliced into rounds. 1/4 cup olive oil. 2 tablespoons lemon juice. 2 cloves garlic, minced. 1 teaspoon dried oregano. Salt and black pepper to taste. Wooden skewers, soaked in water for 30 minutes.
Instructions: Mix olive oil, lemon juice, garlic powder, dried oregano, salt, and black pepper in a bowl using a whisk. Put the chicken, red bell pepper, yellow bell pepper, red onion, zucchini, and red bell pepper on the soaked wooden skewers one after the other. Pour the marinade over the kabobs that have been put together in a shallow dish. Make sure there is a lot of sauce on the kabobs. For better flavor, put it in the fridge with the lid on for at least 30 minutes and up to 4 hours. Warm up the grill over medium-high heat. To keep food from sticking, oil the grill grates. For 10 to 12 minutes, turning the kabobs every now and then, until the chicken is cooked all the way through and the vegetables are soft and slightly charred. The chicken and vegetable kabobs are very tasty. You can serve them hot with your favorite dipping sauce or over cooked rice.
