Cara's Orange Crisp You can make orange chicken without meat or gluten by using cauliflower instead of chicken. This dish is full of flavor and texture. Cauliflower florets are dipped in a crispy almond flour batter and then tossed in a sour orange sauce. Ingredients: 1 small head cauliflower, cut into florets. 1/2 cup almond flour. 1/2 cup unsweetened almond milk. 1 tablespoon arrowroot flour or cornstarch. 1 teaspoon garlic powder. 1/2 teaspoon ginger powder. 1/4 teaspoon salt. 1/4 teaspoon black pepper. 1 cup orange sauce store-bought or homemade, see instructions. Green onions, sliced for garnish. Sesame seeds for garnish.
Instructions: Preheat your oven to 425F 220C. Line a baking sheet with parchment paper. In a large mixing bowl, whisk together the almond flour, almond milk, arrowroot flour or cornstarch, garlic powder, ginger powder, salt, and black pepper until smooth and well combined. Add the cauliflower florets to the bowl and toss until they are evenly coated with the batter. Spread the coated cauliflower florets in a single layer on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, or until the cauliflower is crispy and golden brown, flipping halfway through the cooking time. While the cauliflower is baking, prepare the orange sauce. You can either use store-bought orange sauce or make your own by combining 1/2 cup orange juice, 2 tablespoons coconut aminos or soy sauce, 2 tablespoons rice vinegar, 2 tablespoons maple syrup or low-carb sweetener, 1 tablespoon arrowroot flour or cornstarch, 1 teaspoon sesame oil, and 1 teaspoon grated orange zest in a small saucepan. Bring the mixture to a simmer over medium heat, stirring constantly, until it thickens into a sauce. Once the cauliflower is done baking, transfer it to a large mixing bowl and toss it with the orange sauce until evenly coated.
