Hey, hi, hello! I just saw that magic carpet cake you did and it’s GORGEOUS. as a complete amateur who is pretty much entirely self taught, do you have any advice on breaking into the dessert/baking/pastry decorating industry? I’ve wanted to apprentice somewhere but I haven’t the foggiest of where to find a place that would let me; do I just walk into a cake decorating shop and be like “hire me, I know nothing but I’m a fast learner?” How do I build a portfolio? Do people care about that? 😨😨😨

So, as someone who’s self taught and trying to get into the business, your portfolio is going to be your best friend. I have a big binder that walks into every interview/cake consultation I go on with me. In the front pocket is a handful of copies of my resume--I’ll get into that later--and several dozen color pictures in protective sleeves covering cakes, cookies, pies, plated desserts, breads, etc. Every single thing you make that you think looks good? Take a picture, print it out, and put it in your binder. It’s been my experience that being able to pull out my portfolio and say ‘this is what I can do’ is significantly more important to prospective employers/clients than my actual resume.
The basis of my portfolio was built up when I was unemployed for several months and spent almost every day decorating cake dummies--styrofoam rounds that cost like $10 a piece and can be covered in fondant, decorated, stripped, and reused over and over; you can decorate them with buttercream too if you wrap them in plastic wrap first--and experimenting with recipes. The longer I’ve been in the industry, the more those early pictures have been phased out in favor of newer, better ones, but I do still have several from that time in my portfolio. Your portfolio should not be a stagnant thing. I don’t recommend having anything that makes you look bad in there, but it can be beneficial to you specifically because of your circumstances to be able to point to two pictures and say ‘I did this six months ago and this six weeks ago. I think you can really see how my skills are progressing.’
Because I will be totally honest with you, your best shot at finding a job in the industry right now is probably going to rely on you physically walking into a shop or someplace that’s hiring, saying ‘my resume is pretty bare right now since I’m just starting out, but this is what I can do’, and whipping out your portfolio. Keep an eye on craigslist or indeed.com or wherever you look for jobs and when you see places that are hiring show up and ask to speak with someone. Even if they tell you to apply online! Physically go there. Speak to someone in person. An unimpressive resume will get thrown out or lost in the shuffle, but someone who cares enough to take the time to show up gets remembered.
On the apprentice/trainee end of things, yes! You can go into places and say ‘hire me, I don’t know a lot, but I’m a fast, eager learner!’ That’s essentially exactly what I did at my first two bakery jobs! And they trained me! You may have to start out low on the ladder--my first bakery job involved a LOT more time washing dishes and taking lunch orders than actually baking or decorating--but I’ve never worked in a kitchen or bakery where if someone showed up and put in the time and effort to do a good job on whatever task they were given and said ‘I want to learn more, will you train me?’ where they weren’t met with an enthusiastic ‘YES’. Because if you care enough to do well at the more mundane, someone’s-gotta-do-it jobs, it shows you’re pretty much guaranteed to do even better once it’s something you’re personally invested in.
I see that you’re a makeup artist. USE THAT. One of the big selling points on my resume at one of my first jobs is that I was originally doing opera/theater, because according to the executive chef that meant I was creative. Being a makeup artist can translate really, really well to being a cake artist! There’s a cake artist named Johanna Wyss who I’ve had the pleasure of meeting a couple of times at conventions who does some of the MOST MINDBOGGLINGLY PHENOMENAL CAKES and started out a makeup artist. I still lay awake some nights thinking about this cake she won with a few years ago at Pastry Live:
Like, look at that. How? How is that possible? How is that cake? And it looked even better in person where you could see all the details! Amazing! So yes! You’re creative! You have an artsy background! Play that up!
Which leads me to your resume. You don’t have experience, but you have skills, so if you don’t already have a skills based resume, make writing one for yourself a priority. It’s only in the last year or so that I switched my own resume from a skills based one to an experience based one. If you aren’t able to say ‘this is what I’ve done for these people/places’, then definitely highlight ‘this is what I can do for you’.

QUESTIONS
1. What movie (or part of a movie) always makes you want to cry?
There's not really any movie that will make me cry without fail. It's more of the mood I'm in.
2. Favorite Superhero and why?
Wiccan from Young Avengers. I don't know, he's a really interesting character and pretty damn relatable. Plus he can do some kick ass magic.
3. What drives you?
Fear mostly. I honestly wish this wasn't the answer, but it is. Fear of not being good enough, fear of not accomplishing anything, fear of not living up to my potential.
4. What is a moment that you’ll never forget?
Two things: The moment I walked into my first anime convention and my whole nerd world got bigger. The time I got on the train to NYC with my purse, a duffle bag and no secured place to live for the upcoming month. Words can't describe what that felt like.
5. Do you have an ultimate comfort food?
Ribs, fall-off-the-bone, coated in sauce. Is that super disgusting? It probably is.
6. If money were no object for one day, what would you do?
Just for one day? I'd buy a condo. Seriously, I know that's totally lame, but not having somewhere to live/not being able to afford it is one of my biggest fears, I'd be willing to spend the whole day working out the paperwork if I had to.
7. Do you have an ideal version of the far future? If so what is it?
My far future or the far future? First off, acceptance and understanding of other people and their choices. In the future I'd really like for it to not fear for your life or your freedoms because of how you were born. I'd like us to be the kind of society that aliens want to get to know.
8. What object holds the strongest memory for you?
I have a ring that my great-great grandpa made. Obviously, I've never met him, I don't think I've ever even seen a picture of him, but I always feel a lot more centered when I'm wearing it. I'm not sure that answers the question, but it's all I've got.
9. What do you dream about?
Like my actual dreams? They're mostly anxiety driven chaos. But I daydream about getting to a stable enough place where I don't regret past choices.
10. If you could live anywhere, where would it be?
New York City. It's where I've wanted to live for as long as I can remember.
