Ingredients: 1/2 pound shrimp, peeled and deveined. 1/2 pound squid, cleaned and chopped. 1/2 pound scallops, roughly chopped. 1/4 cup chopped green onions. 2 cloves garlic, minced. 1 tablespoon ginger, minced. 1 red chili pepper, finely chopped. 1 tablespoon soy sauce. 1 tablespoon sesame oil. 1 teaspoon fish sauce. 1/2 teaspoon sugar. 1/4 teaspoon salt. 1/4 teaspoon black pepper. 1 package dumpling wrappers. Water for sealing dumplings. Cooking oil for frying.
Instructions: In a food processor, pulse the shrimp, squid, and scallops until finely chopped. Transfer the seafood mixture to a mixing bowl and add the chopped green onions, minced garlic, minced ginger, chopped red chili pepper, soy sauce, sesame oil, fish sauce, sugar, salt, and black pepper. Mix well to combine. Take a dumpling wrapper and place a spoonful of the seafood filling in the center. Moisten the edges of the wrapper with water, then fold it in half to create a half-moon shape. Press the edges to seal the dumpling. Repeat with the remaining wrappers and filling. Heat some cooking oil in a skillet over medium-high heat. Once hot, add the dumplings and cook until the bottoms are golden brown, about 2-3 minutes. Pour about 1/4 cup of water into the skillet and immediately cover with a lid to steam the dumplings for about 5-6 minutes, or until the wrappers are translucent and the filling is cooked through. Remove the lid and let the dumplings cook for an additional 2-3 minutes to crisp up the bottoms. Serve the spicy seafood dumplings hot with your favorite dipping sauce.
