An interesting and tasty dish that combines the health benefits of quinoa with the bright flavors of spinach pesto. Just right for a quick and healthy meal.
Ingredients: 1 cup quinoa. 2 cups fresh spinach, chopped. 1/2 cup basil leaves. 1/4 cup pine nuts. 2 cloves garlic. 1/2 cup grated Parmesan cheese. 1/3 cup olive oil. Salt and pepper to taste. 1 lemon, juiced.
Instructions: Rinse the quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed. In a food processor, combine spinach, basil, pine nuts, garlic, Parmesan cheese, and lemon juice. Pulse until finely chopped. With the food processor running, slowly drizzle in the olive oil until the pesto is well combined. Season with salt and pepper to taste. Fluff the cooked quinoa with a fork and transfer it to a large bowl. Add the spinach pesto to the quinoa and toss until evenly coated. Serve the Spinach Pesto Quinoa warm or at room temperature.
