These homemade spinach wraps with chopped Greek salad inside are a tasty and healthy way to make a sandwich. This sandwich is great for a light lunch or a quick meal on the go because it is full of fresh vegetables, tangy feta cheese, and tasty olives.
Ingredients: 4 homemade spinach wraps. 2 cups chopped romaine lettuce. 1 cup chopped cucumber. 1 cup chopped tomatoes. 1/2 cup chopped red onion. 1/2 cup crumbled feta cheese. 1/4 cup pitted kalamata olives, chopped. 2 tablespoons chopped fresh parsley. 2 tablespoons extra virgin olive oil. 1 tablespoon red wine vinegar. Salt and pepper to taste.
Instructions: Put romaine lettuce, cucumber, tomatoes, red onion, feta cheese, olives, and parsley in a large bowl. Put red wine vinegar and olive oil on top of the salad. Add salt and pepper, and then toss everything together well. Spread out the spinach wraps, and then put an equal amount of the salad mixture in the middle of each one. Cover the salad with the wraps' sides, and then roll them up tight to make sandwiches. Cut each wrap in half diagonally and serve right away, or tightly wrap in plastic wrap and enjoy later.
