The Ben Franklin Spruce is done! I love this one. I built the recipe using historical references and it is interesting. Nicely carbonated, the molasses comes in on the nose, all earthy dark fruit. The spruce and complementary hops hit the front of the mouth and there is a nice bitterness at the back. Brew day! Woohoo! Two different kinds, both my own recipes. Feels good to finally have time. One is Lemon Coriander Gose and the other is Ben Franklin Spruce. The spruce tips are ones I picked this spring and froze. Notice the new coil wort chiller. It takes 20# of ice to speed cool the wort! In collaboration with our wonderful beer friend Diana at Callister we brewed our debut beer - Tip-C DIPA. Inspired by the forest this West Coast double IPA is made with spruce tips that we picked from trees in Langley, It is packed with C goodness: Vit C, carotenoids, chlorophyll, and Columbus, Centennial, Citra (and Simcoe) hops. It is a Pliny-inspired hoppy, piney IPA - the kind of IPA we adore. This beer is good for you, but pace yourself as it can be trouble at 8.5%.

Tip-C was brewed on Callister’s small-batch pilot system on May 18th. We had lots of fun learning about mash in, sparging and the stamina required for a 90-minute boil. On May 27th the beer was dry-hopped with Citra hops and on June 2nd we packaged the beer into two 5-gallon kegs. Last night, joined by our friends, we celebrated its release!
