The Ben Franklin Spruce is done! I love this one. I built the recipe using historical references and it is interesting. Nicely carbonated, the molasses comes in on the nose, all earthy dark fruit. The spruce and complementary hops hit the front of the mouth and there is a nice bitterness at the back. Bottle day! At least for the Ben Franklin Spruce. It finished fermentation over the last week. Coming in at a sessionable 4.1% a quick taste reveals heavy spruce (no surprise) & pine (pale ale level), and a mild dry sweetness. With the dark mahogany color it is reminiscent of a black IPA. Brew day! Woohoo! Two different kinds, both my own recipes. Feels good to finally have time. One is Lemon Coriander Gose and the other is Ben Franklin Spruce. The spruce tips are ones I picked this spring and froze. Notice the new coil wort chiller. It takes 20# of ice to speed cool the wort!
