Squid in Tomato Sauce Pasta
This tasty Squid in Tomato Sauce Pasta dish is as flavorful as it is colorful, and makes a quick and easy weeknight dinner.
8.5 ounces spelt long pasta (such as tagliatelle, spaghetti or linguine)
1 tablespoon unsalted butter
1 small onion, finely chopped
6 large leaves fresh basil
9.5 ounces fresh squid meat, patted dry and roughly diced
½ teaspoon coarse sea salt
¼ teaspoon freshly ground pepper
¼ teaspoon red chili flakes
1 tablespoon tomato paste
fresh basil leaves, for garnish (optional)
In a pot of salted boiling water, cook spelt tagliatelle according to pacakge’s directions, about 10-12 minutes until al dente.
In a deep, large nonstick skillet, melt butter with olive oil over medium-high heat. Add onion, and cook, 2 minutes. Chop rosemary and thyme leaves finely, and stir in garlic, rosemary and thyme; cook, 1 minute more. Chop basil and sun-dried tomatoes, and add to the skillet, cook, 1 minute. Stir in squid, and cook, 3 minutes, shaking the skillet often, until golden brown. Season with coarse sea salt, black pepper and red chili flakes. Stir in tomato paste and cook out, 1 minute. Stir in 1 1/2 cup of the pasta cooking liquid, and cook, 2 minutes until slightly reduced.
Drain spelt tagliatelle, saving 1/2 cup of the starchy water and immediately add both to the skillet, shaking it carefully to coat the pasta completely in tomato sauce. Serve Squid in Tomato Sauce Pasta immediately, garnished with a few basil leaves, if desired.
