The St. Lucia buns I made for Christmas morning. St. Lucia Buns 1/3 cup milk 1/4 cup butter, cut into small pieces 1/4 cup lukewarm water 1 package dry yeast 1/4 cup sugar 1 egg 1/2 t. salt 1/4 t. saffron (I substitute with turmeric because saffron is expensive as hell) 2 3/4 cups flour 1 T. vegetable oil 1 egg 1 T. water or milk Raisins (dark is traditional, but I went with golden since it's what I had, plus, it seemed fitting for the solstice) Place the milk and butter in a microwave-safe bowl. Microwave for 45 seconds or until the milk is warm and most of the butter is melted. Stir so all the butter melts and you’re left with a smooth mixture. Place the warm water in the bowl of a stand mixer. Add the yeast, stir to combine, and let stand 5 minutes. Add the warm milk and butter mixture to the yeast. Stir in the sugar, egg, salt, and saffron (or turmeric). Then add 1 1/2 cups flour and stir until smooth. Add more of the flour, enough so you can shape the dough into a large ball. Knead the dough with the dough hook attachment for 5 minutes. Place the oil in a clean bowl and put the dough in it, turning it several times to coat. Cover the bowl and let the dough rise for 45 minutes or until it’s doubled in size. Punch down the dough. Break it into pieces, forming into either round buns or twisty ones by rolling pieces into small snakes, crossing them over each other, and curling the ends inward. Place the buns 2 inches apart on a greased cookie sheet, cover, and let rise for 30-45 minutes, until the buns have doubled in size. Preheat oven to 350°F. Create an egg wash with the egg and milk and brush the buns with it. Garnish with raisins.
