These Fresh Strawberry Bars are a delightful treat made with real berries and a buttery crust. They are incredibly easy to make and perfect for any occasion!
Ingredients: 1 cup all-purpose flour. 1/2 cup unsalted butter, softened. 1/4 cup powdered sugar. 1 cup fresh strawberries, diced. 1/4 cup granulated sugar. 1 tablespoon cornstarch. 1 tablespoon lemon juice. Powdered sugar for dusting optional.
Instructions: Preheat your oven to 350F 175C. In a mixing bowl, combine flour, softened butter, and powdered sugar until crumbly. Press the mixture into the bottom of an 8-inch square baking dish lined with parchment paper. Bake the crust in the preheated oven for 15-20 minutes, or until lightly golden. While the crust is baking, in another bowl, mix diced strawberries, granulated sugar, cornstarch, and lemon juice. Spread the strawberry mixture over the baked crust. Return the dish to the oven and bake for an additional 20-25 minutes, or until the edges are bubbly and the topping is set. Allow the bars to cool completely before slicing into squares. Dust with powdered sugar before serving, if desired.

Strawberry vanilla jam is squished between a buttery oat crust and a crumble topping to make these tasty bars.
Ingredients: 1 cup all-purpose flour. 1 cup rolled oats. 1/2 cup brown sugar. 1/4 teaspoon baking powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, cold and cubed. 1 cup strawberry vanilla jam.
Instructions: Warm the oven up to 175F 350C. A 9x9-inch baking pan should be greased. Put flour, oats, brown sugar, baking powder, and salt in a bowl and mix them together. Add the butter and mix it in until the mixture looks like big crumbs. Use your hands to press half of the mixture into the pan's bottom. Spread strawberry vanilla jam on top of the crust in a thin layer. Cover the jam layer with the rest of the crumb mixture. It should be baked for 25 to 30 minutes, or until the top is golden brown. Let it cool all the way down before cutting it into bars.

LOW FAT STRAWBERRY OATMEAL BARS
INGREDIENTS:
- 1 1/4 cups of all-purpose flour
- 1 1/4 cups old-fashioned oats
- 1/2 cup brown sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2/3 cup of Reduced Fat vegetable oil spread
- 2 tsp of vanilla extract
- 1 cup of strawberry preserves
DIRECTIONS:
In a bowl, combine dry ingredients. Add butter and vanilla; stir until crumbly. Set aside 1 cup. Press remaining crumb mixture evenly into an ungreased 13-in. x 9-in. baking pan. Spread preserves over crust. Combine coconut and reserved crumb mixture; sprinkle over preserves.
Bake at 350° for 25-30 minutes or until coconut is lightly browned. Cool. Yield: 3 dozen.
