The annual Blitum capitatum (strawberry spinach, strawberry blite, blite goosefoot) provides leaves and red berries that can be added to salads. The fruit is said to have a taste reminiscent of sweetcorn and the juice can be used as a red dye. I have read that the plant should be eaten in moderation when raw due to it containing oxalic acid.

Quick Strawberry Spinach Salad Delicious Easy Meal

Fresh spinach, sweet strawberries, tangy red onion, crunchy candied pecans, and creamy feta cheese are all mixed together in a balsamic vinaigrette dressing to make this Strawberry Spinach Salad extra tasty. You can eat it as a side dish or as a light, healthy meal by itself.

Ingredients: 6 cups fresh spinach leaves. 1 pint fresh strawberries, hulled and sliced. 1/2 cup red onion, thinly sliced. 1/2 cup candied pecans, roughly chopped. 1/4 cup feta cheese crumbles. 1/4 cup balsamic vinaigrette dressing. Salt and pepper to taste.

Instructions: Once the spinach leaves are clean and dry, put them in a big salad bowl. Slice the strawberries, cut up the red onion, add the candied pecans, and crumble the feta cheese into the bowl with the spinach. Add the balsamic vinaigrette dressing to the salad and mix it all together. To make sure all the ingredients are mixed well, gently toss the salad. Add pepper and salt to taste. Serve right away as a tasty and refreshing strawberry spinach salad.
