Simple Chicken Noodle Soup
Haven’t got long for dinner? Barely got anything in the cupboards? Soup is an inexpensive way to make everything last a lot longer and it’s the best thing to heat up in the winter.
Ingredients 3 small boneless chicken breasts 1.2 litres/ 2 pints of water 3 carrots 85g of noddles 4 chicken stock cubes
Optional additions Fresh coriander Frozen spinach Handful of broccoli
Method
Fill a large saucepan with the water, drop in your stock cubes, add a pinch of salt, then your chicken breasts. Bring this to a simmer and cook for 30 minutes. Skim any foam from the surface, then remove the chicken breasts to cut into pieces.
Continue to simmer the liquid, add the noddles, veg, and cook for another 5 or so minutes. Add the chopped chicken back into the soup for a minute or so. Season with salt and pepper, and serve piping hot.
