Haha no, I have not seen much fic that gets in the way of the OTP, unless you count noncon. There IS one fantastic WWX/LWJ/Wen Qing WIP that I'll rec whenever you're ready. And there's plenty of WWX+JC post-canon stuff of varying complexity, and plenty of good JC slash with various people.

And it’s funny, y’know, how much fandom builds this ‘focus on a dynamic? that means shipping!’ instinct even inside our own brains. Or in mine, at any rate. I ship cause I wanna turn up a relationship to eleven, cause I wanna see everything it can do, or, at least, I historically have done so, rather than because I necessarily want a particular relationship to be romantic and/or sexual.
So I think of shipping as a kind of tool that way, and of being an indicator of where the best stuff is... but maybe it’s not, in this brave new world of canon relationships, maybe it’s not when we tend towards fluffy au’s, maybe it just never was and I was wrong all the time... but, no, I think it has worked for me. But possibly, probably, only in contexts where ‘none of these ships will be canon, anyway.’
ANYWAY, yeah, Wei Wuxian owns my heart and I die over Wangxian scenes, clearly, but I’m also just shockingly into Jiang Cheng and what is his deal! With the way he has both formally more but actually less power than Wei Wuxian, with the AMAZING betrayal of trust that just happened there... loyalty and command and fucking with it and so forth is a really big thing for me; friends who love each other fighting each other; .... but I imagine anything that’s really good that focuses on Jiang Cheng will have to dig into those stories, because, they are his story. So.
