Ingredients: 1 cup 2 sticks unsalted butter, softened. 1 cup granulated sugar. 1/2 cup powdered sugar. 1 large egg. 1 teaspoon lemon zest. 2 tablespoons fresh lemon juice. 1/2 teaspoon vanilla extract. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 3 cups all-purpose flour. 1 cup diced fresh strawberries. Pink food coloring optional. Additional granulated sugar for rolling about 1/4 cup.
Instructions: Warm your oven up to 350F 175C and put parchment paper on baking sheets. Melt the butter and mix it with the granulated sugar and powdered sugar in a large bowl until the mixture is light and fluffy. Add the egg, lemon zest, lemon juice, and vanilla extract and beat until everything is well mixed. Mix the baking soda, salt, and all-purpose flour together in a different bowl. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. Add the strawberry dices and mix well. You can make the strawberry color stronger by adding a few drops of pink food coloring. Put the cookie dough in the fridge for at least 30 minutes to cool down. Mix the dough and then roll it into 1-inch balls. Then, cover each ball with more granulated sugar. Cover the dough balls in sugar and place them on the baking sheets that have been prepared, leaving space between each cookie. Use the bottom of a glass or your fingers to gently press down on each cookie. After the oven is hot, bake for 10 to 12 minutes, or until the edges are just beginning to turn golden.
