Ingredients: 6 ripe peaches, peeled, pitted, and sliced. 1 cup all-purpose flour. 1/2 cup unsalted butter, cold and cubed. 1/2 cup granulated sugar. 1/4 cup brown sugar. 1 teaspoon baking powder. 1/2 teaspoon ground cinnamon. 1/4 teaspoon salt. 1/2 cup milk. 1 teaspoon vanilla extract.
Instructions: Preheat the oven to 375F 190C. In a mixing bowl, combine the sliced peaches with brown sugar and cinnamon. Set aside. In another bowl, mix together the flour, granulated sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the milk and vanilla extract until just combined. Spread the peach mixture evenly into a tart pan. Drop spoonfuls of the dough over the peaches. Bake for 35-40 minutes or until the topping is golden brown and the peaches are bubbly. Let cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream if desired.

Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1/4 cup unsalted butter, softened. 1/4 cup milk. 1 egg. 1 tsp baking powder. 1/2 tsp vanilla extract. 1/4 tsp salt. 1/2 cup diced peaches canned or fresh. 4 oz cream cheese, softened. 1/4 cup powdered sugar. 1/2 tsp lemon zest. 1/2 tsp lemon juice. 1/2 cup whipped cream. Peach slices and mint leaves for garnish optional.
Instructions: Preheat the oven to 350F 175C and line a muffin tin with cupcake liners. In a mixing bowl, combine flour, granulated sugar, softened butter, milk, egg, baking powder, vanilla extract, and salt. Mix until smooth. Fill each cupcake liner halfway with the batter. In another bowl, mix together diced peaches, cream cheese, powdered sugar, lemon zest, and lemon juice until well combined. Place a spoonful of the peach and cream cheese mixture on top of the batter in each cupcake liner. Cover the peach mixture with a little more cupcake batter, filling each liner about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the cupcakes comes out clean. Allow the cupcakes to cool in the muffin tin for a few minutes, then transfer them to a wire rack to cool completely. Once cooled, top each cupcake with a dollop of whipped cream and garnish with peach slices and mint leaves if desired. Serve and enjoy!
