With a soft crumb and a buttery cinnamon-sugar crumb topping, these Crumb Coffee Cake Muffins make a great breakfast treat. Great to have with your coffee or tea in the morning.
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp salt. 1/2 cup unsalted butter, melted. 1/2 cup milk. 1 large egg. 1 tsp vanilla extract. For the Crumb Topping:. 1/2 cup all-purpose flour. 1/2 cup granulated sugar. 1/4 cup unsalted butter, cold and cubed. 1 tsp ground cinnamon.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a mixing bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, combine melted butter, milk, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Divide the batter evenly among the muffin cups, filling each about 2/3 full. To make the crumb topping, combine flour, sugar, cold cubed butter, and cinnamon in a separate bowl. Use a fork or pastry cutter to blend until it forms coarse crumbs. Sprinkle the crumb topping over each muffin. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the tin for a few minutes, then transfer to a wire rack to cool completely. Serve and enjoy!
