Ingredients: 1 lb shrimp, peeled and deveined. 1 tbsp olive oil. 1 onion, diced. 3 cloves garlic, minced. 1 tbsp ginger, minced. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 can 14 oz light coconut milk. 1 tbsp curry powder. 1 tsp turmeric. 1 tsp cumin. 1 tsp paprika. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: Heat olive oil in a large skillet over medium heat. Add diced onion, minced garlic, and minced ginger. Saut until fragrant, about 2-3 minutes. Add sliced bell peppers and cook for another 2-3 minutes until slightly softened. Stir in curry powder, turmeric, cumin, paprika, salt, and pepper. Pour in light coconut milk and bring to a simmer. Add shrimp to the skillet and cook for 4-5 minutes until shrimp turn pink and opaque. Taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving. Serve hot with rice or naan bread.
