With perfectly grilled tender salmon and bright vegetables, these Teriyaki Salmon Kabobs are a great mix of sweet and savory flavors. The teriyaki marinade gives these kabobs an umami flavor that is hard to resist. They are great for any barbecue or dinner party.
Ingredients: 1 lb salmon fillets, cut into 1-inch cubes. 1/4 cup teriyaki sauce. 2 tablespoons soy sauce. 2 tablespoons honey. 1 tablespoon rice vinegar. 1 teaspoon minced garlic. 1 teaspoon minced ginger. 1 red bell pepper, cut into 1-inch pieces. 1 green bell pepper, cut into 1-inch pieces. 1 red onion, cut into 1-inch pieces. Wooden skewers, soaked in water for 30 minutes.
Instructions: Soy sauce, honey, rice vinegar, minced garlic, and minced ginger should all be mixed together in a bowl with a whisk to make the marinade. Put the salmon cubes in a plastic bag that can be closed again and again, and then pour the marinade over them. Put the bag in the fridge for at least 30 minutes and up to two hours. Warm up the grill over medium-high heat. Put the red bell pepper, green bell pepper, red onion, and salmon that has been marinated on the soaked wooden skewers one after the other. Before cooking the skewers, put them on the grill and cook each side for 4 to 5 minutes, or until the salmon is done and the vegetables are soft and crispy. For extra flavor, brush the skewers with any marinade that is still left over while they are grilling. Serve the salmon kabobs hot with salad or steamed rice. Ingredients: 4 salmon fillets. 1 cup teriyaki sauce. 2 cups shiitake mushrooms, sliced. 1 cup Arborio rice. 4 cups chicken or vegetable broth. 1/2 cup white wine. 1 onion, finely chopped. 2 cloves garlic, minced. 1/2 cup grated Parmesan cheese. 2 tablespoons olive oil. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Put salmon fillets in teriyaki sauce and let them sit for 30 minutes. Warm up the olive oil in a big pan over medium-low heat.
