Ingredients: 1 tbsp coconut oil. 1 onion, finely chopped. 3 garlic cloves, minced. 1-inch piece of ginger, grated. 2 cups shredded cabbage. 1 red bell pepper, sliced. 1 carrot, thinly sliced. 1 lb chicken breast, thinly sliced. 4 cups chicken broth. 1 can 14 oz coconut milk. 2 tbsp soy sauce. 2 tbsp fish sauce. 2 tbsp lime juice. 1 tsp red curry paste. Salt and pepper to taste. Fresh cilantro for garnish.
