Ingredients: 1 lb ground chicken or tofu. 1 tablespoon vegetable oil. 1/2 cup chopped onion. 2 cloves garlic, minced. 1 red bell pepper, diced. 1 cup shredded carrots. 1/2 cup chopped fresh cilantro. 1/4 cup chopped fresh mint leaves. 1/4 cup chopped roasted peanuts. 1 head of iceberg lettuce, separated into leaves.
Instructions: Warm the vegetable oil in a big pan over medium-low heat. When you add the minced garlic and chopped onion, saut until the garlic smells good. Put in the ground chicken or tofu and cook it until it turns brown and is fully cooked. Add the shredded carrots and diced red bell pepper. Cook for a few minutes until the carrots start to get soft. Put 2 tablespoons of soy sauce, 2 tablespoons of lime juice, 1 tablespoon of brown sugar, and 1 teaspoon of sriracha sauce in a small bowl. Mix them together to make the peanut sauce. Mix until it's smooth. Put the cooked chicken or tofu, vegetables, and peanut sauce in a skillet. Stir to mix. Take the pan off the heat and add the chopped mint leaves and cilantro. To put together the lettuce wraps, take a lettuce leaf, add some of the filling, and then top it with chopped roasted peanuts. Make a wrap with the lettuce leaf and the filling.
