Still the best way to use ripe bananas is to bake a quick bread with it! This edition fits more into the current season! It is moist, healthy and super delicious! The whole bread was nearly gone after one serving... That's a good sign right? Recipe ⤵ (also in 🇩🇪)⠀ .⠀ 3 tbsp chia seeds⠀ 3 ripe bananas (approx. 300g)⠀ 200g strawberries⠀ 200g wholegrain spelt flower⠀ 50g cashews⠀ 2 tsp baking powder⠀ 1 tsp lemon zest⠀ .⠀ 1. Mix chia seeds in a small bowl with approx. 12 tbsp water and stir.⠀ 2. Mash the bananas and 100g strawberries. Try to do it with a fork and if the strawberries are too hard you can use an immersion blender.⠀ 3. Add crushed cashews, baking powder, lemon zest and the chia “egg”.⠀ 4. Slice the remaining strawberries to cubes and add them as well. Combine everything.⠀ 5. Add the spelt flour, mix and fill the batter into greased a baking tray. Now you can add some toppings if you want to. For example chocolate drops or more strawberries.⠀ 6.
