Ingredients: 2 slices whole grain bread. 1/2 cup fresh peas, shelled. 1/2 cup ricotta cheese. 1 tablespoon lemon zest. 1 tablespoon fresh mint, chopped. 1 tablespoon olive oil. Salt and pepper to taste.
Instructions: Toast the whole grain bread until it turns golden brown. Put the fresh peas, ricotta cheese, mint, lemon zest, olive oil, salt, and pepper in a small bowl. Combine well. Spread the ricotta and pea mix out evenly on the pieces of toasted bread. Serve right away and enjoy!
