This Blender Tofu Curry is a quick and easy vegan meal that's full of flavor. By blending the ingredients for the curry sauce, you achieve a smooth and creamy texture without the need for additional thickeners. It's gluten-free and perfect for a satisfying weeknight dinner.
Ingredients: 1 block firm tofu, pressed and cubed. 1 cup coconut milk. 2 tablespoons curry powder. 1 tablespoon soy sauce or tamari. 1 tablespoon maple syrup. 1 tablespoon lime juice. 2 cloves garlic, minced. 1 small onion, chopped. 1 red bell pepper, sliced. 1 cup broccoli florets. 1 tablespoon olive oil. Salt and pepper to taste. Cooked rice or quinoa for serving.
Instructions: In a blender, combine coconut milk, curry powder, soy sauce, maple syrup, and lime juice. Blend until smooth to make the curry sauce. Heat olive oil in a large skillet over medium heat. Add minced garlic and chopped onion, saut until softened. Add cubed tofu to the skillet and cook until lightly browned on all sides. Pour the curry sauce from the blender into the skillet with tofu. Stir to combine. Add sliced red bell pepper and broccoli florets to the skillet. Season with salt and pepper. Simmer the curry for 10-15 minutes, stirring occasionally, until vegetables are tender and flavors are well combined. Serve the tofu curry over cooked rice or quinoa. Enjoy!

Ingredients: 1 block tofu, pressed and cubed. 2 tablespoons red curry paste. 1 can 13.5 oz coconut milk. 1 red bell pepper, sliced. 1 yellow bell pepper, sliced. 1 onion, sliced. 1 cup broccoli florets. 2 tablespoons soy sauce. 1 tablespoon brown sugar. 1 tablespoon lime juice. 2 cloves garlic, minced. 1 tablespoon ginger, minced. 1 tablespoon vegetable oil. Salt to taste. Cooked rice for serving. Fresh cilantro leaves for garnish.
Instructions: Vegetable oil should be heated over medium heat in a big skillet. Add the ginger and garlic, minced, and saut until fragrant. Stir in the red curry paste and cook for one minute. Add the lime juice, brown sugar, soy sauce, and coconut milk. Mix thoroughly to blend. Add the onion, broccoli florets, sliced bell peppers, and cubed tofu. Toss everything in the curry sauce, coating it all. Once the tofu is thoroughly heated and the vegetables are soft, cover and simmer for ten to fifteen minutes. Add salt to taste to season. Add some fresh cilantro leaves as a garnish and serve over cooked rice. Have fun!

Salt and pepper to taste. Chopped cilantro for garnish.
Instructions: Heat olive oil in a large skillet over medium heat. Add chopped onion, minced garlic, and minced ginger. Saut until fragrant. Add cubed tofu to the skillet and cook until lightly browned on all sides. Stir in curry powder and soy sauce, coating the tofu and vegetables evenly. Pour in coconut milk and bring to a simmer. Cook for 5 minutes. Add chopped mustard greens to the skillet, stirring until wilted. Season with salt and pepper to taste. Garnish with chopped cilantro before serving. Serve hot with rice or naan.
