Easy Tomatillo Sauce (Salsa Verde!)

Grilled Tomatillo Salsa
6 tomatillos 3 green onions 1 poblano pepper 4 garlic cloves, unpeeled 1 handful sized bunch of cilantro (or parsley) 1 tsp sea salt 1/4 tsp coarse black pepper zest and juice of 1 lime 1/4 c water (or more if needed)
Preheat grill to 500°. Prepare the tomatillos by removing the husk and rinsing the stickiness off with water. Grill the tomatillos, green onions, poblano pepper, and garlic cloves (put garlic on foil so they don’t slip through the grates) for about 5-8 minutes, flipping often to get even char marks and blister the skin of the poblano. When the vegetables are all grilled and everything is cool enough to handle, trim the root ends of the green onions, chop the tomatillos into large wedges and peel the skin off of the poblano pepper. Add all of the grilled ingredients and all remaining ingredients into a blender and blend for 1 minute until everything is evenly incorporated. Add more water depending on how thin you like your salsa. Chill in the fridge for at least 30 minutes before serving.
