Ingredients: 2 medium tomatoes, diced. 4 large eggs. 1/2 teaspoon salt. 1/4 teaspoon sugar. 1/4 teaspoon white pepper. 2 tablespoons vegetable oil. 2 cloves garlic, minced. 2 green onions, chopped. 3 cups cooked white rice.
Instructions: In a bowl, beat the eggs and season them with salt, sugar, and white pepper. Set aside. Heat the vegetable oil in a large skillet over medium-high heat. Add the minced garlic and cook until fragrant. Add the diced tomatoes to the skillet and stir-fry for about 2 minutes, or until they start to soften. Pour the beaten eggs into the skillet with the tomatoes. Stir-fry continuously until the eggs are cooked but still slightly runny. Stir in the chopped green onions and cook for another minute. Serve the tomato and egg mixture over the cooked white rice. Enjoy!
