Happy Mid Autumn Festival🌕!!! Made mooncakes for the second time in my life, this year the prints came out really pretty! Also tried my hands on teocheow style mooncakes. Made over 24 different flavours for the Cantonese mooncakes and plus minus 18 flavours for the teocheow mooncakes. Made some candied citrus peels for snacking from grapefruit and orange piths. The rind and meat of the grapefruit was made into honey grapefruit concentrate? for tea (bottle in the back). Made Kitsune Udon with protein accompaniment of Miso Soya Pork and Spicy Bulgogi Pork. Bonito stock for udon as I prefer a stronger taste than Kombu.For the pork I used a mixture of pork belly and pork shoulder shabu shabu cuts for different texture and fats. My family are meat eaters so we can't go a meal without meat. So yup Kitsune Udon taste super yum but meat as the sides are a must. Also adding meat may not be very authentic but I had it in a restaurant before and it was good. I start with the inari first for authentic taste than add the miso soya pork for a change of taste and finally the spicy pork. Happy Dragon Boat festival to my friends and family today! Made Zhang to celebrate and for prayers today. First time making Zhang and was super excited to try different style of Zhang, and I think I went overboard. But oh well. I tried making some that were nyonya glutinous rice dish inspired. Such as the nasi kunyit and rendang flavour, and the pulut tai tai style with palm sugar coconut filling(pulut inti style). The normal Back Zhang is hokkien style without salted egg yolk but some with abalone. Kee Zhang has 2 types the traditional and pandan flavour. Also tried hakka style with glutinous rice flour but with chopped up hokkien style filling as I didn't have mince and preserved radish in hand but it still tasted really good. Of course I cannot forget the coconut palm sugar syrup to go with the sweet Zhang, as it's my brother's favourite. He drowns them in the syrup.
