Tomato and Mozzarella Baked Eggs are a delicious and simple breakfast or brunch option. The combination of ripe tomatoes, creamy mozzarella, and perfectly baked eggs is both satisfying and flavorful.
Ingredients: 4 large eggs. 2 medium tomatoes, diced. 1/2 cup mozzarella cheese, shredded. 2 tablespoons fresh basil, chopped. Salt and pepper to taste. Olive oil for greasing.
Instructions: Preheat your oven to 375F 190C. Grease four individual ramekins with olive oil. Evenly distribute the diced tomatoes into the ramekins. Crack one egg into each ramekin over the tomatoes. Sprinkle shredded mozzarella cheese over the eggs. Season with salt and pepper to taste. Bake in the preheated oven for about 15-20 minutes or until the egg whites are set, but the yolks are still slightly runny, or longer for firmer yolks. Remove from the oven and let them cool slightly. Garnish with chopped fresh basil. Serve hot and enjoy!
