This Thai Chicken Coconut Soup, also known as Tom Kha Gai, is a comforting and aromatic soup with flavors of lemongrass, coconut, and spices. It's easy to make and perfect for chilly days or whenever you crave a taste of Thailand.
Ingredients: 2 cups chicken broth. 1 can 13.5 oz coconut milk. 1 stalk lemongrass, bruised. 3 slices galangal or ginger. 2 kaffir lime leaves. 2 tablespoons fish sauce. 1 tablespoon lime juice. 1 teaspoon sugar. 1 cup sliced mushrooms. 1 cup cooked chicken, shredded. 2 green onions, sliced. 1 red chili, thinly sliced optional. Handful of cilantro leaves for garnish.
Instructions: Apple cider vinegar, galangal or ginger, kaffir lime leaves, fish sauce, lime juice, sugar, and chicken broth should all be put in a pot together. On medium heat, bring it to a boil. Then let it cook for 10 minutes. Place cooked chicken and mushrooms in a pan. Keep cooking for five more minutes. Take out the kaffir lime leaves, galangal or ginger, and lemongrass. Add the red chili and green onions and mix them in. If necessary, change the seasoning. Serve hot with cilantro leaves on top.

Ingrediënten voor 2-4 kommen:
- 2 takjes citroengras toko
- 1 cup shiitake paddestoelen (ong. 100 gram/half bakje)
- 4 sjalotjes
- 2 tomaten
- 4 kaffir blaadjes toko
- 2 rawit chili toko
- 0,5l water
- 200 gram tofu
- 1 blik kokosmelk (400 gram/ml)
- 2 eetlepels sojasaus
- 3 limoenen
- verse koriander/selerij
- noodles/rijst (ong. 100 gram)
Ingrediënten voor 5-8 kommen:
- 4 takjes citroengras toko
- 2 cups shiitake paddestoelen (ong. 200 gram/heel bakje)
- 8 sjalotjes
- 4 tomaten
- 8 kaffir blaadjes toko
- 4 rawit chili toko
- 1l water
- 400 gram tofu
- 2 blikken kokosmelk (400 gram/ml)
- 4 eetlepels sojasaus
- 6 limoenen
- verse koriander/selderij/peterselie
- glasnoodles/rijst (on.g 200 gram)
Voorbereiding:
> a limoengras snijden(1,5/2cm)
> a shiitake in plakjes snijden
> a sjallotjes in kleine stukjes snijden
> b tofu in blokjes snijden
> b tomaten in plakjes snijden
> doe vanaf nu handschoenen aan (geen grap)
> b rawit chili’s ontzaden
> b rawit chili’s in hele kleine stukjes snijden
Koken:
> kook rijst/noodles volgens verpakking
Maak soep
> pak soeppan/hapjespan
> voeg 0,5l/1l water toe
> voeg bak a (limoengras, shiitake, sjalotjes) toe
> voeg 4/8 kaffir blaadjes toe
> laten koken
Ondertussen:
> pers 2 limoenen uit
> snijdt 1/2 limoen(en) in 8 parten
> check de rijst/noodles
> snijdt koriander/selderij/peterselie
Maak soep verder
> voeg bak b toe (rawit chili’s, tofu, tomaten)
> voeg kokosmelk toe
> voeg 2/4 lepels sojasaus toe
> voeg een grote snuf zout toe
> roeren
> minimaal 5 minuten koken
> haal van het vuur
> voeg sap van 2/4 limoenen toe in pan
> proef
> nom
Serveren:
> doe soep in kom
> doe naar verhouding rijst/noodles in kom
> serveer met 1/2 limoenen
> garneer met gesneden koriander/selderij/peterselie
