Enjoy the rich flavors of Tournedos Rossini with this new take on a burger. A burger with black truffles, foie gras that has been seared, juicy filet mignon, and a rich red wine demi-glace tastes like it came from a high-end restaurant.
Ingredients: 2 filet mignon steaks 6 oz each. Salt and black pepper to taste. 2 brioche buns. 2 slices of foie gras 2 oz each. 1/4 cup black truffle slices. 2 tablespoons unsalted butter. 1 tablespoon olive oil. 1/4 cup red wine. 2 tablespoons beef demi-glace. 2 sprigs fresh thyme. Arugula leaves for garnish.
Instructions: Add a lot of salt and black pepper to the filet mignon steaks. Set a grill or grill pan on high heat. If you like your steaks medium-rare, grill them for about 3 to 4 minutes on each side. Take them out of the heat and give them a minute to rest. Cut the brioche buns in half and lightly toast them on the grill while the steaks rest. Put the butter and olive oil in a different pan and heat them over medium-low heat. Put in the slices of foie gras and sear them for one to two minutes on each side, until they are browned and just a little crispy. Take it out of the pan and set it aside. Put the black truffle slices in the same pan and cook them for about one minute. Add the fresh thyme sprigs and the red wine and beef demi-glace. For about three to four minutes, cook until the sauce gets a little thicker. Take out the thyme sprigs. After toasting the buns, put a filet mignon steak on the bottom half of each one. Add a slice of foie gras that has been seared and a large spoonful of the truffle sauce with truffle slices on top. Put some arugula leaves on top of the truffle sauce, and then put the other half of the toasted bun on top of that. You should serve your Tournedos Rossini Burgers right away and enjoy this gourmet burger experience!
