Ingredients: 1 whole beef brisket 12-15 lbs. 1/4 cup coarse black pepper. 1/4 cup kosher salt. 1/4 cup paprika. 1/4 cup brown sugar. 1 tablespoon garlic powder. 1 tablespoon onion powder.
Instructions: Preheat smoker to 225F 107C using hickory wood bisquettes. Trim excess fat from the brisket, leaving a 1/4-inch layer. Combine black pepper, kosher salt, paprika, brown sugar, garlic powder, and onion powder to create a rub. Generously apply the rub to the brisket, covering all sides. Place the brisket in the smoker, fat side up. Smoke for approximately 1.5 hours per pound or until the internal temperature reaches 195-205F 90-96C. Wrap the brisket in foil and let it rest for at least 30 minutes before slicing.
