Make sure the racks of pork spare ribs are well covered by rubbing the spice mixture all over them. Mix olive oil and apple cider vinegar with a whisk in a small bowl. Put this mixture on top of the ribs. Put the ribs on a baking sheet that has aluminum foil or parchment paper on it. Put another piece of foil over the ribs and seal the edges to make a tent.
