This irresistible @solkiki_chocolatemaker vegan white chocolate is one of the most surprising bars I have tasted this year! Also the bar that got the best facial expressions and sounds at tastings😂 . It has an strong aroma of peanut butter ( Dutch pindakaas, not American peanut butter ) and brown butter. Of course there is no dairy at all here but it’s the smell of roasted cocoa butter and vanilla at the same time. The flavor experience is complex and goes from roasted peanuts to salted caramel, while cafe latte shows up with some hopjes candy. The coffee is just one of the many passengers on that ride. It plays with the nuttiness and the vanilla perfectly until the salt kicks in and bring it all towards a more savory treat. The sublime mouthfeel goes almost liquid and the coffee note stays in the finish well after the bar is gone. . And the bar goes. . All. Too. Our first TTTT post! This stands for Tangential Tasting Twin Tuesday. I never considered using the #tttt_2021 hashtag from Trish @myic2016 because we are a maker, but speaking this morning with @cocoaencounters encouraging us to post we thought we’d give it a try. This week it’s #tttt_y, so we found a theme with the letter Y. Find out more about TTTT by checking out the Monday interview on with Trish @cacaosana, perhaps it is something for you to join in also! So, kids are at school now, Bob and I are trying to wake up in the garden, drinking tea and eating way too much chocolate (if that’s possible). See here our new box for Yirgacheffe coffee and peanut white chocolate! We haven’t sent this new packaging out yet, so it’s a new look. The award stickers are printed, so to save Bob’s finger from having to put all the stickers on each pack every time! We love our white chocolate and we are also big fans of coffee and peanut, hence you will find more chocolate in our assortment with these flavours. I often want to work more with these ingredients, but I get nervous sometimes about slowly turning into the coffee-peanut-chocolate company so I do try to restrain myself and not go to these ingredients too often! We made this bar for the first time in 2016 after we found an interesting and delicious coffee bean with bright and sparkling flavours called ‘Yirgacheffe’ from Ethiopia. It paired well with white chocolate and peanut. The bar is smooth throughout, the peanut and coffee have been ground together with all the ingredients, so no ‘bits’ in the bar. In this bar the flavour of peanut is be strong and the coffee is present more as an after-note to accentuate the depth of the peanut. I love the idea of having an ingredient that plays a defining role in a chocolate bar and gives direction to the flavour of a chocolate, it runs the show, but more from the sideline. Much like the people who are driving forces in our lives. Posted @withregram • @cocoaencounters I know it was Tangential Twin Tasting Tuesday yesterday but as it is #tttt_y week it seemed appropriate to post today. As I didn’t have any Y origins or makers but did have two bars that I was yearning to taste I’m twinning with @littlebeetle_chocolates @cacaosana, @openingchocolate and @_chococard_ with Yellow. Yellow because this is the colour of energy, joy and happiness which is what I often feel after tasting a good dark milk and because these bars both had yellowish fruits in the tasting notes so I was intrigued to know if a milk bar could taste of yellow. 💛🍫 The Duffy’s Dominican Republic 45% milk is a new bar. The 65% dark version delivers delicious pineapple notes. This bar is unexpectedly even more fruity. Jammy apricots notes sing out from the start. Yummy fruity caramel notes that remain light and bright. Wow! 💛💛 The Solkiki Gran Chililique, a 62% dark milk has the familiar fruit yoghurt aroma from the dark bar of the same origin and delivers juicy tropical fruits and creme caramel, as bright and yellow as a dark milk can be. Energy, joy and happiness in both. Yellow is also in the title of one of my favourite stories but sadly missing from my library ( I must have lent it out) so I’ve included a portrait of the author. In contrast, yellow here symbolises illness and decay, putting the mental state of the protagonist in sharp contrast to the joy and happiness brought by my chocolate experience making it even more poignant.
