The New Orleans “holy trinity” (diced onions, celery, and bell pepper), garlic, diced turkey kielbasa, parsley, cilantro, tiny diced Fresno chilies, @tonychacheres creole seasoning, and what was left of last night’s beer-braised pork tenderloin and its pot liquor. Served with saffron rice (jasmine rice simmered with Spanish saffron threads) and a pile of thinly sliced kale.
