This clean eating low carb lasagna made in a crock pot is a better way to enjoy a traditional comfort food. It's healthy and tasty because it has zucchini instead of pasta, lean ground turkey, and a lot of vegetables.
Ingredients: 1 lb lean ground turkey. 1 small onion, chopped. 2 cloves garlic, minced. 1 bell pepper, chopped. 1 zucchini, sliced. 1 cup mushrooms, sliced. 1 can 14 oz crushed tomatoes. 1 can 14 oz tomato sauce. 1 teaspoon dried oregano. 1 teaspoon dried basil. Salt and pepper to taste. 8-10 large zucchini, sliced thinly lengthwise. 2 cups part-skim ricotta cheese. 1 cup grated Parmesan cheese. 2 cups shredded mozzarella cheese.
Instructions: Ground turkey, onion, and garlic should be cooked in a skillet until the turkey is browned and the onions are clear. Put in the mushrooms, zucchini, and bell pepper. Cook until the vegetables are soft. Tomato sauce, oregano, basil, salt, and pepper should all be added now. Let it cook for 5 to 10 minutes. Spread a thin layer of the turkey mix on the bottom of a slow cooker. Put ricotta cheese, mozzarella cheese, sliced zucchini, and Parmesan cheese on top of each other. Put another layer of ingredients on top of the last one until all of the ingredients are used up. Put the lid on top and set the heat to low. If you want, you can serve it hot and top it with fresh basil.
