Basics
"Animal" forms can be a result of a person's body reacting with dark/foreign magic in the environment. Known environments include the Dark World and a world covered in Twilight. Sometimes this form may be a way of protecting an individual with the Hero's Spirit/Triforce of Courage from becoming a lost soul like others. The form may reflect aspects of their personality. There are also abilities that may be unique to this form, though certain abilities as a human are lost. To retain one's original form, light spirit magic, a moon pearl, or the Master Sword could be used depending on the circumstances. However, there are certain conditions where that may not work. For example, even with the moon pearl, Link will turn into a bunny for a few seconds if he runs into a rabbit beam in A Link to the Past. Dark fog, which is composed of shadow crystals, will turn Link into a wolf even with the Master Sword in Twilight Princess.
A different plane of existence, such as the mortal realm for a spirit or a place from another time, may cause an individual to take on an animal form, though it is unknown if this is a personal choice or a requirement. In these locations, they will only be seen by certain people. The Hero's Shade takes the form of a Golden Wolf in Hyrule, but is a skeletal ghost when he transports TP Link to his own realm. In Breath of the Wild, Wolf Link only appears to BotW Link and either does not or cannot turn into a human. It could be possible that he is a spirit as well, and, if that were the case, being in a place from another time would not cause an individual to take on an animal form.
Elements of the human's form may be expressed in their animal form. Wolf Link retains his blue eyes and has a brownish blond color possibly representing his hair around his face. He keeps his earrings and has a green tone likely representing his hat (though he gets the hat after transforming back into a human). It's also possible that he keeps the triforce mark on his hand, but it's only seen when glowing. Bunny Link seems to only retain his tunic, though if you consider him to have always had pink hair, then his fur matches his hair color.
In Linked Universe, a feature of the animal is retained after transforming back, though it will eventually fade if the animal form is not used. This can be hair color, as it is with Legend's pink hair, or markings, such as with Twilight's face designs. I've also seen versions of this in other AUs, for example, TP Link with fangs.
The animal forms taken by courageous heroes may be equivalent to the powerful boar form of Ganon(dorf). These forms both seem to be a result of their spirit reacting with certain kinds of magic or as a protective measure, sometimes with the help of the Triforce. Since one form is related to courage and the other power, they may have different rules and properties. They also have varying degrees of control over their form. Princess Zelda has never been shown in an animal form, and she stays a human even in the twilight.
In Twilight Princess, Link can understand and speak to animals in wolf form. In A Link to the Past, humans in animal/monster/etc. form in the Dark World can understand each other and can still speak human language. In this AU, their ability to speak and understand other animals/monsters and their ability to speak human language varies. The closer the animal is to their own species, the easier it is for them to understand. Some have no difficulty at all conversing with any species, whereas others have trouble doing so or find it impossible. Occasionally, familiarity with the species may correlate with the ability to understand it. Generally, humans-turned-animal will be able to understand and speak to each other easily if they try.
I use the term "animal form" to cover any time Link is transformed into an animal. This includes both twilight/divine beast/blue-eyed beast forms and dark world forms. The former would be unique to people related to the Triforce; the latter would be one possible form anyone could take in the dark world, the other forms being things like monsters and trees. It is unknown whether ghosts having an animal form is unique to Triforce bearers or something any ghost could do.

This is a Legend of Zelda AU with some Linked Universe inspiration and crossover.
It's partially a spinoff AU of Linked Universe in that I occasionally base features off of them or merge Links in the same way. Additionally, I may draw something involving their human forms. However, it's also just an Animal Form Legend of Zelda AU. I think I'll tag LU on a post by post basis, then.
I don't know if this is supposed to be an "Every Link turns into an animal form during their adventure" AU, something that happens after their games, or a Linked Universe-type "they transform into a divine beast either through Twilight's crystal or other means" AU. I'm mainly just having fun coming up with designs.
Although I'm using Linked Universe as a basic format for the different Links and the merging of some heroes, I'll also draw additional Links.
I might refer to them by names from their Hero title or Game title. If they don't have a commonly used name, I'll make one up. I have ideas for all of them, and I'll share what they are as I draw pictures. If I decide not to draw some of them, I'll eventually share the idea below.
