1. Lechon

Lechon is derived from Spanish word means roasted suckling pig, it is one of the most popular food in the Philippines. Lechon is usually stuffed inside with lemongrass, garlic, onion, chives and other spices. It is slowly cooked in a large bamboo over a charcoal.
Lechon is traditionally served at different celebration and festive events, it is served with liver sauce and if there is leftover it can cook again called lechon paksiw. It's cooked by simmering the left over meat from lechon with vinegar, soy sauce, peppercorns, bay leaves, salt and liver sauce.

The meat can be pork or chicken with a mixture of vinegar, soy sauce, bay leaf, salt and pepper, it can be marinated or slowly cook.
