#vanilla extract cake

So, a few days ago I was doing a big project and I decided that it would be fun if during it I took a break to try out the Horrible Evil Vanilla Extract Cake, but I wanted to test the theory that it would actually be good if you put in a lot more sugar, so I made two batches: classic and double sugar. So I baked them, 3 classic and 3 sugary, and they came out looking like this

My whole house smelled like vanilla extract, but not in a good way.

I then strong-armed my sibling into trying one of each with me. We started with the classic and each grabbed a bite of the jaw only to realize to my great disappointment that it was good. It kind of tasted like a waffle actually, with just a hint of a bitter aftertaste. I was floored. We worked out way up and I was starting to think that somehow I hadn't put enough vanilla extract in it when I found what my sibling and I dubbed The Pocket. See, I later found out that the reason the cakes were the way they were was that I had incorrectly assumed that since they were relatively deep I would need to cook them longer so I baked them for about 30 minutes, maybe a little over. That meant the vast majority of the alcohol had cooked off, except for the very center of the brain case, hence The Pocket. And Jesus Christ it was like the cake lulled you into a false sense of security then punched you right in the face. I got my siblings friend to try it the next day and they described it as "like when you get a crusty in your septum and for a second it hurts like you're going to go blind".

So, yeah. Mission accomplished?

The sugary one was interesting because while it still had The Pocket I fucked up on the math and there was so much sugar in it it caramelized on the outside. Pretty good though.
