Ingredients: 1 1/2 cups all-purpose flour. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/2 cup vegan butter, softened. 1/2 cup brown sugar. 1/4 cup granulated sugar. 1 flax egg 1 tablespoon ground flaxseed mixed with 3 tablespoons water. 1 teaspoon vanilla extract. 1 cup vegan chocolate chips.
Instructions: Preheat oven to 350F 175C. In a small bowl, whisk together flour, baking soda, and salt. In a large mixing bowl, cream together vegan butter, brown sugar, and granulated sugar until light and fluffy. Add flax egg and vanilla extract to the creamed mixture, mix until well combined. Gradually add the flour mixture to the wet ingredients, mixing until just combined. Fold in vegan chocolate chips. Scoop dough onto a baking sheet lined with parchment paper, leaving space between each cookie. Bake for 10-12 minutes, or until edges are golden brown. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
