A hearty and tasty vegan dal made with sweet potatoes, red lentils, and fragrant spices. This dish is creamy, rich, and full of good things for you, so it's a great choice for any meal.
Ingredients: 1 cup red lentils. 2 cups water. 2 cups sweet potatoes, diced. 1 onion, chopped. 3 cloves garlic, minced. 1 tbsp ginger, grated. 1 tsp cumin seeds. 1 tsp coriander powder. 1/2 tsp turmeric powder. 1/2 tsp chili powder. 1 can 14 oz diced tomatoes. 1 can 14 oz coconut milk. Salt to taste. Fresh cilantro for garnish.
Instructions: Run cold water over the red lentils until the water is clear. Put sweet potatoes, onion, garlic, ginger, cumin seeds, coriander powder, turmeric powder, chili powder, diced tomatoes, and coconut milk in a large pot. Add water to the pot. Bring to a boil, then lower the heat and let it simmer for 25 to 30 minutes, stirring every now and then, until the lentils and sweet potatoes are soft. Add salt to your liking. Add fresh cilantro as a garnish before serving.
