Ingredients: 8 oz 225g fusilli or rotini pasta. 1 cup butternut squash, cubed. 1 cup Brussels sprouts, halved. 1 cup fresh cranberries. 1/2 cup pecans, chopped. 1/4 cup red onion, thinly sliced. 2 tbsp olive oil. Salt and pepper to taste. For the dressing:. 1/4 cup olive oil. 2 tbsp balsamic vinegar. 1 tbsp maple syrup. 1 tsp Dijon mustard. 1 clove garlic, minced. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Preheat the oven to 400F 200C. Toss the butternut squash, Brussels sprouts, and cranberries with 2 tbsp of olive oil on a baking sheet. Season with salt and pepper. Roast in the preheated oven for 20-25 minutes or until the vegetables are tender and slightly caramelized. While the vegetables are roasting, cook the pasta according to the package instructions. Drain and set aside. In a small bowl, whisk together all the dressing ingredients until well combined. In a large mixing bowl, combine the cooked pasta, roasted vegetables, pecans, and red onion.
