This vegan coconut rice pudding is made with arborio rice, coconut milk, almond milk, and maple syrup. It is creamy and comforting. It's a delicious choice for breakfast or dessert!
Ingredients: 1 cup arborio rice. 1 can 13.5 oz full-fat coconut milk. 2 cups almond milk. 1/2 cup maple syrup. 1 teaspoon vanilla extract. 1/2 teaspoon ground cinnamon. 1/4 teaspoon salt. 1/2 cup shredded coconut optional.
Instructions: Arborio rice, coconut milk, almond milk, maple syrup, vanilla extract, cinnamon, and salt should all be mixed together in a medium saucepan. Stir the mixture often as you bring it to a simmer over medium-high heat. Turn down the heat and let it simmer slowly for 30 to 40 minutes, stirring every now and then, until the rice is soft and the mixture has thickened. Take it off the heat and let it cool down for a while. You can serve it warm or cold, and if you want, you can top it with shredded coconut.
